½ cup Suji (fine rava or semolina or cream of wheat)⅓ cup sugar or add as required½ teaspoon cardamom powder⅓ cup ghee 10 to 12 cashews 2 tablespoons raisins 1 teaspoon chironji 1.25 cups water 1 pinch edible camphor (optional)

Step-by-Step Instructions

First, crush the green cardamom seeds to a fine powder. In case you already have cardamom powder, you can skip this step. Take a kadai or a heavy bottom vessel and keep it on a low flame. Add ghee into it and let it melt. Meanwhile, take another pan and add sugar and water into it. Heat this mixture on a medium flame. Let the solution come to a boil. In the kadai, it is time to add Suji (semolina). Also, add cashews. Stir and roast the suji. You have to do it continuously to make sure the grains of suji get fried evenly Simultaneously, keep an eye on the sugar solution. When it starts boiling, lower the flame and let it simmer. Fry and stir the semolina for 7 to 8 mins. The grains will become light golden. Here you can keep stirring to get the desired color of the Sooji Halwa.
