Ingredients

12 ounces no-yolk wide egg noodles

1 cup reduced fat sour cream

1 cup lowfat cottage cheese

⅓ cup reduced fat cream cheese

1 cup golden raisins

¼ cup Splenda® Sugar Blend

1 large egg + 2 large egg whites

½ teaspoon vanilla extract

¼ teaspoon ground cinnamon

Instructions

  1. Cook noodles according to package directions.
  2. Preheat oven to 350°F. Coat a 1- to 2-quart shallow baking dish with cooking spray.
  3. In bowl, combine sour cream, cottage cheese, cream cheese, raisins, Splenda Sugar Blend, egg, egg whites, vanilla extract, and cinnamon.
  4. Drain noodles, reserving ¼ cup cooking water. Add reserved cooking water to sauce mixture and mix well. Add drained noodles and toss gently to coat. Transfer mixture to prepared dish.
  5. Bake for 40–45 minutes, or until set.
