- What is Shortening
- Shortening produces a product with longer shelf life. Shortening basically used to produce tender baked product. Shortening is made by hydrogenating vegetable oil. Lard and shortening have a higher fat content compared to about 80% for butter and margarine. One must know the amount of trans-fat in shortening which is not good for health.
