www.ChemistryIsLife.com - The Chemistry of Marshmallows (2024)

Marshmallows are a sugar based food containing mainly gelatin, water, and sugar that has been beaten until spongy and constructed into small cubes. I chose to study marshmallows because they are a much loved snack by all. Their odd consistency, yet sweet flavor has always made me very curious as to how they are made. I associate marshmallows with family and fun. Whether we are camping or visiting my grandma, marshmallows always seem to come into the picture. They are very much a comfort food to me, and therefore the reason I chose to research them.Composition of ...

Main Chemicals, Compounds, Components

    • Corn Syrup(HFCS)

Corn syrup is a thick syrup that is made from maize(corn) starch and is comprised of maltose and oligosaccharide. It is created when corn starch gets processed by the enzyme glucose isomerase so that a high majority of its glucose is transformed into fructose. Corn syrup consists of Hydrogen, Fluorine,Carbon, and Sulfur. It is 53 percent glucose, 42 percent fructose, and 5 percent of another polysaccharide. This sweetener was first marketed in the early 1970’s in Iowa by the Clinton Corn Processing Company.

    • Sugar(C12H22O11)

Sugar also known as sucrose is a sweet crystalline carbohydrate obtained mainly from sugarcane and sugar beets. Sugar consists of one molecule of fructose and one molecule of glucose that have been chemically bonded together. So, sucrose is 50 percent fructose and 50 percent glucose. It is a disaccharide which means that the sugars molecules consist of two monosaccharide residues. Sugar is comprised of Carbon, Hydrogen, and Oxygen. Sugar was first discovered in England by Western Europeans in 1099.

Chemistry's Role

Corn Syrup

Chemistry plays a role in making marshmallows because an enzyme called glucose isomerase is put into corn starch which causes a large amount of the starches glucose to combine and form fructose. Corn syrup is naturally occurring but is extracted in a lab commercially by man.

Sugar

The act of extracting the sugar from the beets and canes occurs in a lab by man. Sugar is made naturally in most fruits though. Sugar is a chemical compound. The chemical formula for when sugar is made is C6H12O6+C6H12O6=>C12H22O11+H2O. Which also means glucose + fructose => sucrose + water. This formula shows how glucose and fructose attach to each other by way of a condensation reaction. Diffusion is used in this process of making sugar. Sugar is made by using sugarcane or sugar beets. You start by shredding them up and squeezing them till its natural juices have been removed. It is then boiled until thick. This is when molasses crystals begin to settle on the top of the mixture. These crystals are sent to a centrifuge that spins very fast in order to extract the molasses and leave the natural sugar. The sugar gets dried and then it is ready to eat. Sugar is found naturally in lots of unprocessed foods such as, fruits, vegetables, and milk. The sugar used in marshmallows is taken from sugar beets and sugarcane.

Additional Chemistry

A chemical reaction occurs when the collagen from gelatin comes in contact with water and hydrolysis occurs. When this happens molecules inside of the collagen are forced to separate to create a bigger structure called a colloid.

People actually used to create marshmallows using the root of a marshmallow plant because of its ability to swell when it came in contact with water. Ancient Egyptians were the first to produce and eat marshmallows.

FAQs

What is the chemistry of a marshmallow? ›

A typical marshmallow contains sugar, corn syrup, and gelatin, plus some air. That's it. “A marshmallow is basically a foam that's stabilized by gelatin,” says Richard Hartel, a food engineer at the University of Wisconsin–Madison. In marshmallows, the foam is made up of air suspended in a liquid sugar mixture.

Is marshmallow healthy? ›

Marshmallow is generally considered safe. It has no reported side effects. It appears to be safe for use during pregnancy and breastfeeding, although you should check with your doctor before taking it. One study suggests marshmallow may lower blood sugar levels.

What percent of a marshmallow is sugar? ›

A traditional marshmallow might contain about 60% corn syrup, 30% sugar, and 1–2% gelatin.

What are marshmallows made of today? ›

Today the manufacturing of marshmallows is quite different. Mallow root sap has been replaced by gelatin. Corn syrup, starch, sugar and water are mixed with the gelatin. The fluffy mixture is piped through long tubes and then cut into equal pieces.

What is the pH of a marshmallow? ›

The pH was lower at higher honey concentrations (p < 0.0001), with pH values ranging from 4.67 to 5.05 for marshmallows without honey, 3.75 to 3.8 for marshmallows with 50% honey, and 3.5 to 3.7 for marshmallows with 75% honey.

What is the science behind burning marshmallows? ›

The flame stage - oxygen diffuses to the surface of the marshmallow from the surrounding air. At the surface of the marshmallow, carbon reacts with oxygen, which produces a blue flame. 5. The oxidation stage - carbon atoms combine with oxygen atoms to produce carbon monoxide, and then carbon dioxide.

Is it OK to eat marshmallows everyday? ›

Marshmallow is LIKELY SAFE for most people when taken by mouth. In some people, it might cause low blood sugar levels.

Are there any negative effects of marshmallow? ›

Marshmallow might slow blood clotting. Taking marshmallow along with medications that also slow blood clotting might increase the risk of bruising and bleeding.

Why do bodybuilders eat marshmallows? ›

The amount of marshmallows/sugar found in some of our proteins is not bad and can be beneficial. The foods/condiments/drinks you consume on a daily basis more than likely have more sugar than what is found in some of our proteins. Sugar/carbs can help replace muscle glycogen and can be used as a rapid fuel source.

Can we eat marshmallows directly? ›

Marshmallows are a delicious snack on their own, but they can get a little boring when you eat them bald. You can really amp up their flavor by mixing them into a variety of snacks, desserts, and other dishes. Experiment with the ingredients you have on hand and see what kinds of tasty concoctions you can put together!

What does marshmallow root do for the gut? ›

Protects the gut: Marshmallow root can help relieve a number of digestive issues including heartburn, acid reflux, diarrhea, and even constipation. The mucilage coats the inner lining of the stomach and esophagus, protecting it and preventing burning sensations.

Does eating a marshmallow help with a cough? ›

The gelatin helps coat your throat even better than honey." So, here is the truth behind this viral claim. According to health experts, eating marshmallows during a cough won't cure the disease; instead, it will worsen it big time.

What is marshmallow's real name? ›

Chris Comstock, better known by his stage name Marshmello, was born on May 19, 1992. He is an American electronic dance music producer and DJ.

What was the original purpose of marshmallows? ›

Marshmallow has been enjoyed around the world for over 4,000 years, with the earliest known recipe coming from Egypt, around 2000 B.C.E., and was not used as a tasty snack, but as medicine instead.

What state of matter is a marshmallow? ›

A lump of marshmallow is basically solid in the sense that it will not flow under an (small) applied stress. However the structure of the solid may rearrange under stress as the sugar syrup flows, so over time even a small stress may cause a long lived deformation after the stress is released.

What gas law is the marshmallow experiment? ›

A bag of marshmallows is used to demonstrate Boyle's Law, the relationship between pressure and volume.

Is melting a marshmallow a chemical change? ›

When you melt marshmallows, you are only changing the state of the marshmallows (i.e. solid and liquid marshmallows are the same substance). A physical property has changed, but the composition of the substance is the same. This is called a physical change.
