We love Japanese food. We love musubi! I want to introduce our delicious musubi to you. I will show you the three most popular musubi at 279! First of all, let me explain to you what musubi is,

Musubi is a Japanese rice ball. It is a dish which ingredients are put inside and wrapped in cooked rice. It is really typical Japanese food in Japan, When you go to a convenience store and supermarket, there are various types of musubi. We often buy them for breakfast, lunch, and even dinner for takeaway.

Musubi is also called onigiri, omusubi, and nigirimeshi. Omusubi is the same with musubi but when you put "O" before a word it makes it more of a polite word. However, it is said by Japan Rice Ball Association (日本おにぎり協会) that there are different theories on why the musubi is shaped the way it is. Omusubi is said that it shows the shape of a mountain, and is "god's shape" which will give benefits from the power of God. In other words, there is a strong theory that musubi must be triangular and the other names can have any shape. There are also regional differences on the name.

At 279 we call a Japanese triangular rice ball musubi. There are two reasons. One of them is that it’s easier to call them musubi than the other names such as onigiri and nigirimeshi. The second, musubi also has another meaning in Japanese. It is written 結び (musubi), it means to connect with someone. We want to connect with our customers through our shop so we decided to call them musubi.

Musubi often is wrapped with seaweed. Here are some of the reasons why:

1. Has a high nutritional value
2. Goes well with the unique smell and flavour of seaweed
3. Contains rice and its moisture so it’s easy to hold without feeling sticky

They were meant to be together! At 279, we change the types of seaweed and the cut depending on the musubi.

1. CHICKEN RICE

Contains: karaage chicken, egg, Japanese mayo

Since we started musubi, the best seller isn’t changed at all. Karaage chicken is one of the famous Japanese dishes and is often used as ingredients of fillings. Also the eggs used in chicken rice also include fresh cream to make it milder and creamier.

2. SHA-KE (GRILLED SALMON)

Contains: salmon, salt koji, tobikko

We cook salmon soaked in salt koji. It makes the salmon tender and is a milder seasoning than salt. Tobikko (flying fish roe) adds texture.

3. SHISO MISO

Contains: shiso leaf, red shiso miso

This miso used is our handmade miso, we made it to add to the flavour of shiso. Shiso miso is also fired on both sides after covering and smells delicious, with a slight charred flavour.
