What is the secret to good dumplings?

Well, my son Barrett, would say, “Salt!” He actually said that these were the best dumplings that I had made and I make them a lot. He said that I finally added enough salt to them, LOL! So, the secret to good dumplings is definitely the seasonings, because without that then you almost just have a chicken broth taste.

Is biscuit dough the same as dumplings?

Technically a biscuit dough and a dumpling are not the same, because biscuit dough is meant to be baked and dumplings are meant to be boiled. However, I have learned that a biscuit dough can be boiled just like dumplings. Plus, using a can of biscuits to make dumplings is so much easier than making dumplings from scratch. And, a lot quicker. It takes literally minutes to open up the cans, bring to a boil and dump in the biscuits.

Do you cook dumplings with lid on or lid off?

You can cook dumplings with a lid or without a lid. But, I choose to cook my dumplings without a lid, because I am constantly stirring. Plus, mine tend to boil over and spill onto my stove, mainly because I get side tracked and forget them, LOL. So, I just stay by my pot and stir, because it only takes a few minutes for the dumplings to get done.

FAQs

What is the difference between chicken and dumplings and chicken and biscuits? ›

A variant known as "chicken and pastry" or simply "chicken pastry" features wide, flat noodles rolled from biscuit dough. Where such a distinction is made, it is sometimes considered a different dish from "chicken and dumplings", which is known for small balls of dough rather than flat strips.

What makes chicken and dumplings thicker? ›

Use Cornstarch to Thicken Chicken and Dumplings

To give that a little thicker texture we're going to add 1 cup of cool water to 2 tablespoons of cornstarch and stir it up well. Make sure the soup is brought back to a good boil and go ahead and stir in the cornstarch mixture.

How do you thicken chicken broth for chicken and biscuits? ›

Add Flour Or Cornstarch

You can thicken soup by adding flour, cornstarch, or another starchy substitute. For the best results, never add flour or cornstarch directly to your soup. If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool.

Why are my chicken and dumplings not fluffy? ›

Don't Overwork the Dumpling Dough

Stir everything together until the wet and dry ingredients are combined and you don't see any more dry flour. The dough might look a little lumpy, but that's okay! Overworking the dough is one of the easiest ways to end up with tough dumplings.

Is biscuit dough the same as dumpling dough? ›

There's no need to mix up any dough! And don't worry, you're not missing out—refrigerated biscuit dough is a natural stand-in for homemade dumplings in both taste and texture. As an added bonus, the dough strips will also cook more evenly than a large dumpling would if it was dropped into the hot liquid.

How do you tell if dumplings are done in chicken and dumplings? ›

Set a timer for 15 minutes, don't lift the lid during this time, the dumplings need to steam. Open the lid and insert a toothpick into the middle of a dumpling to check for doneness. If it comes out clean, it's ready. If not, cover and simmer for a few more minutes.

How do you keep chicken dumplings from falling apart? ›

So that they cook perfectly, the dumplings need to steam, so cover the pot with its lid. Keep the pot at a gentle simmer when cooking the dumplings. An aggressive simmer or boiling will break them apart. Keep the heat low and cover the pot so that they steam.

How do you keep chicken and dumplings from sticking together? ›

Bring the broth to a boil, reduce the heat to a simmer and drop in the dumplings a few at a time, giving them a good stir to prevent sticking together. When all the dumplings have been added, cover the pot and simmer for 20 minutes, stirring occasionally so the dumplings don't stick together.

Why is my chicken and dumplings soupy? ›

It could also be that your doughballs cooled your broth enough that the outer surface of the doughball couldn't get "set" fast enough and the flour began to mix with the broth. If that was the issue, I'd think hotter broth, a larger volume of hot broth, or smaller/fewer dumplings at once would help.

Why are my chicken and dumplings watery? ›

Why is my chicken and dumplings watery? If you follow our One-Pot Chicken and Dumplings recipe, the liquid for the chicken and dumplings should be rich and comforting, not watery. Adding too much liquid, whether that is water or broth, is the main reason the dish would be watery.

How to thicken up chicken and dumplings without cornstarch? ›

You can make a slurry out of flour and cold water, add to the chicken mixture and cook until thickened (you need to cook this to cook the raw taste out of the flour).

Why do my dumplings dissolve in chicken and dumplings? ›

Lower your heat so that your broth is just barely barely barely boiling and drop these pieces in one at a time. It is important that you DO NOT STIR. We are not going to stir these as we don't want our dumplings cooking up. If you do stir, you will basically cause your dumplings to dissolve.

Should dumplings be cooked covered or uncovered? ›

Cover and simmer until dumplings are cooked through, about 15 minutes. Once you have covered the pan, do not uncover and peek while the dumplings are cooking! In order for the dumplings to be light and fluffy, they must steam, not boil. Uncovering the pan releases the steam.
