You’ll find them in most local restaurants serving Irish cuisine, but you can also find them in pastry shops.

In terms of taste, the dates are a perfect match for the caramel. The texture is soft and melting, though a little sticky for the teeth.

Recipe: Sticky Toffee Pudding

Ingredients

  • Serves 4
  • For the Pudding:
    • 225 g flour
    • 100 g chopped fresh dates
    • 250 ml boiling water
    • 60 g butter
    • 170 g brown sugar
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon liquid vanilla
    • 1 egg
  • For the sauce
    • 65 ml full cream
    • 15 g butter
    • 60g brown sugar

Preparation

  • Scald the dates for 30 minutes, then blend them with a base of water.
  • Then add the vanilla and baking soda. Mix again
  • Mix the butter and sugar in a bowl. Add the beaten egg, flour and date mix.
  • You should obtain a hom*ogeneous, slightly lumpy paste.
  • Place in a pudding tin, cover and steam for 1h30 (place a bowl of water in the oven).
  • Meanwhile, prepare the sauce by heating the crème fraîche, butter and sugar in a saucepan. Simmer, turning regularly. You should obtain a syrupy caramel.
  • Serve your pudding warm, topped with caramel!
  • Enjoy your meal!
