I personally love that these are guilt-free, low on sugar and high on almond content. I absolutely love how easy these are to make and I don't need any fancy ingredients. These cookies don't even call for the baking powder or baking soda and yield such good results. These can be the purest form of Marzipan cookies. These are egg-free as authentic Marzipan is does not contain egg and they are gluten-free. Best of all everyone who has ever tried these cookies when I bake them, is a fan of these cookies.

Decoding Marzipan: Almond Paste vs. Marzipan

German Marzipan stands distinctive and superior to it's US and UK counterparts due to its high almond content and lower sugar ratio. It's more moist, softer and more malleable then other Marzipans.

American marzipan, on the other hand, has a lower almond content and is stiffer sue to its high sugar content. In the US, you might find almond paste a suitable replacement due to its soft texture designed for baking, bearing less sugar and more almonds.

However, if you want a good quality Marzipan, making your own Marzipan is a worth while endeavor as it's super easy.

How Almonds Define the Flavor of Marzipan

The predominant flavor in marzipan comes from almonds, giving it that distinct nutty and subtle sweetness. The choice of almond, whether it's finely ground almond flour or almond meal, greatly impacts the texture and flavor of your marzipan. Using blanched almonds (almonds without the skin) ensures a smoother, more delicate flavor, while almond extract accentuates the almond taste, making your cookies truly remarkable.

Guess what, our main ingredient for these Marzipan Cookies is blanched almond flour. Let's take a look at the other ingredients.

Ingredients to make Marzipan Cookies or Almond Flour Cookies

  • Blanched Almond Flour : This is our main ingredient for these almond cookies. Do not mistake this for Almond Meal which is coarser and made with almond with skin.
  • Powdered Sugar : Also known as confectioners sugar. This works best for this recipe for the smooth texture. Avoid using crystalized sugar for this recipe.
  • Almond Extract : To enhance that almond flavor!
  • Butter Stick : I used a vegan butter stick in this recipe. However if you are not vegan you can use a regular butter stick. Make sure the butter stick is at room temperature. Remove it out from the refrigerator a few hours before you make these cookies. Do not use melted butter for this recipe.
  • Salt : Just a tad bit salt will help balance the sweetness of the cookies.
  • Slivered almond for garnish

  1. Before you begin with the recipe, make sure to bring your butter stick to room temperature. Please do not melt the butter in the oven or else the cookies won't hold their shape.
  2. Preheat the oven to 350 F / 176 C. Add slivered almond pieces into a flat bowl and keep aside.
  3. In a bowl, add the butter stick and confectioners sugar and cream the butter with a fork or spatula, until well blended, fluffy and paler color.
  4. Next add the almond flour, salt and almond extract and incorporate the ingredients to form a dough.
  5. Remove the dough ball from the bowl and roll the ball on the kitchen counter to make an even cylinder. This is your marzipan.
  6. Divide the cylinder into 8 equal parts.
  7. Next take each part, roll it into a ball and slightly press each ball with your palm to flatten it, maintaining the edges.
  8. Dunk one side of the disc in the bowl with slivered almonds and coat the slivered almond one one side. Repeat for remaining dough.
  9. Line the cookie sheet with parchment paper and arrange the cookies with slivered almond side on top on the cookie sheet.
  10. Bake for atleast 10 minutes until the edges start to brown. Depending on the oven and your elevation the cookies could take an extra 5 minutes so keep an eye on them.
  11. Once the edges start to turn brown, remove them onto a wire rack and allow them to cool.

Difference between German marzipan and UK/US marzipan
