Garlic Butter Pan-seared Top Round Steak (2024)

Instructions

Allow the top-round steak to come to room temperature for about 30 minutes. Pat it dry with paper towels.

Season the steak generously with salt and black pepper on both sides.

Place a cast-iron pan on medium-high heat and add vegetable oil or clarified butter.*

*What is clarified butter?

Clarified butter, or ghee, is pure butterfat–butter with the milk solids and water removed.Used for frying and sautéing, substituting it for oil to impart a rich buttery flavor.

How to make your own clarified butter:

  • Melt butter in a 1-quart saucepan over low heat for 10-15 minutes until it's fully melted, and solids separate from fat.
  • Remove from heat, let it sit for 5 minutes, skim off foam, and pour off the clear liquid, leaving behind milk solids. Store refrigerated.

Once the pan is hot, add the seasoned steak. Sear for about 4-5 minutes on each side for medium-rare, adjusting the time based on your preferred level of doneness. Use tongs to flip the steak.

Add minced garlic and chopped parsley to the pan in the last minute of cooking. Optionally, add Worcestershire sauce for extra flavor.

Tilt the pan slightly and spoon the melted butter over the steak. Add the garlic and parsley on top of the steak for extra flavor.

Remove the steak (when the steak has reached your desired level of doneness) from the pan and let it rest on a cutting board for 5-10 minutes. This allows the juices to be redistributed.

Slice the steak against the grain into thin strips. Arrange on a plate and drizzle any remaining garlic butter from the pan over the top.
