  • 1 cupcup lukewarm water, divided
  • 1 cuplukewarm milk (or oat milk for vegan**)
  • 1 teaspoongranulated sugar
  • 2 teaspoonsinstant yeast
  • ½ teaspoonbaking soda
  • 1 teaspoonkosher salt
  • Equipment:Non-stick English muffin rings / crumpet rings*

For the English muffins:

  • ¾ cupwarm milk
  • 2 teaspoonsyeast
  • 1 tablespoongranulated sugar
  • 1 ½ teaspoonskosher salt
  • 1 tablespoonmelted butter
  • 1large egg
  • 2 cups(280 grams) all purpose flour
  • ¼ cupwhole wheat flour (35 grams)
  • Cornmeal, for rising
