Aunt Lou here.

Growing up, we were a meat and potatoes family. This recipe combines two of my favorites…scalloped potatoes and ham steak! Mom always made ham steak with fried potatoes (and it is so good!), and I love any kind of cheesy potatoes. So when I saw this, I knew that it would be a recipe we would love.

I was happily surprised with how easily this all came together. I sliced up the potatoes and onion right into the crock pot and it all came together in no time!

I also made an adjustment on the recipe. Since Ryder and I really love cheese, I added a little bit more to this recipe. And boy was it good!

Simple, easy weeknight dinner with a surprise (at least it was for me) – the ham comes out very tender. I like ham, it’s easy to cook and versatile, but let’s admit it – it can be very dry! Not with this recipe though. Any extra potatoes are good with breakfast the next day.

FAQs

Do potatoes need to be covered in liquid in crock pot? ›

Do the potatoes need to be covered in liquid? No, because only a small amount of the liquid will evaporate out of the crockpot during cooking. You won't need to drain the potatoes before you mash them.

How long does it take for potatoes to soften in crock pot on high? ›

Pour the chicken broth over the potatoes and add water to cover the potatoes. Scatter the remaining thyme and the butter on top. Cover and cook on HIGH for 5 to 6 hours, or until potatoes are fork tender. Discard the bay leaves and peppercorns.

How do you thicken soupy scalloped potatoes? ›

runny scalloped potatoes. If you find yourself faced with a soupy pan of potatoes, shake a few tablespoons of flakes into the sauce and mix them around with a fork or a small whisk. The flakes will soak up the extra liquid in a flash, and you can keep adding them until the sauce is at the proper thickness.

What pairs well with scalloped potatoes? ›

Scalloped potatoes are rich and filling. Lean proteins and other veggies pair nicely, try grilled ham, pan-seared fish, roast chicken, broiled lobster, or even a filet of beef tenderloin. If no animal proteins are desired a lovely side salad with a sharp vinaigrette works great.

Why are my potatoes still hard after cooking in the crockpot? ›

Insufficient Liquid: If there wasn't enough liquid in the crockpot, it could have caused uneven cooking. Potatoes need to be fully submerged in liquid to cook evenly. Old Potatoes: Very old or stored potatoes can become starchy and may not soften as well during cooking. It's best to use fresh, firm potatoes.

Do potatoes go on top or bottom of meat in crockpot? ›

Place firm, slow-cooking root vegetables like potatoes and carrots at the bottom of the crock and pile the meat on top. Set the heat level: A general rule of thumb is that cooking on the low setting (170 degrees F for most models) takes about twice as long as cooking on high (280 degrees F on most models).

When to add potatoes to slow cooker on low? ›

Tender vegetables such as zucchini and beans can be added to your dish in last ¾ - 1 hour of cooking when cooking on High, or 2 hours if cooking on Low. Hard, starchy vegetables like potato and carrots are best added around 3 hours before the meal is done if cooking on High, and 4 hours on Low.

How do you keep potatoes from drying out in a crock pot? ›

Keep it on 'low' or 'warm'

The lowest setting of your slow cooker will keep the potatoes nice and warm without drying them out. If you notice that they are getting a little dry, loosen them up by stirring in an extra splash of milk or cream or a few tablespoons of butter.

Why do my scalloped potatoes take so long to cook? ›

Because potatoes take a while to cook through, this dish tends to bake for an hour or more. Keeping it covered with foil for 2/3 of the cooking time will ensure that they are well on their way to doneness before exposing the top to the heat element for browning.

Why did my scalloped potatoes get watery? ›

Watery scalloped potatoes are not good, and is often caused by using the wrong type of potato. This recipe requires starchy potatoes, such as russets or Yukon golds, not waxy potatoes. Another cause is washing or holding the sliced potatoes in water (as outlined in the question above).

Why does my sauce break in scalloped potatoes? ›

The curdling is caused by high heat, which is hard to avoid in an oven. So to keep the sauce together, tackle it before the dish goes in the oven. Instead of simply layering grated cheese and milk or cream with the potatoes, you need to make a smooth cheese sauce.

Can scalloped potatoes be made a day ahead and reheated? ›

Prepare the recipe as directed, then let it cool to room temperature. Cover the baking dish tightly with aluminum foil, then store in the refrigerator for up to 3 days. If the recipe has cheese, breadcrumbs, herbs, or any other toppings, reserve it and add it before reheating.

How far in advance can you slice potatoes for scalloped potatoes? ›

If raw, once the potato is cut you can store in the refrigerator, covered with water for 12-24 hours. Be sure to keep submerged in water to prevent slices from turning gray or brown.

Does food in crock pot have to be covered with liquid? ›

How much liquid do I add? Water or liquid is necessary to create steam. When cooking meat or poultry, the water or liquid level should cover the ingredients to ensure effective heat transfer throughout the crock. Some manufacturers of slow cookers recommend adding liquid to fill the stoneware 1/2 to 3/4 full.

Should I cover potatoes in water? ›

Storing peeled potatoes overnight is as easy as 1-2-3: Peel potatoes using a vegetable peeler. It's best to leave them whole, but you can go ahead and cube or dice them if you want — just don't slice them too thin. Fill a bowl with cool water, submerge the potatoes, then cover with plastic wrap.

Do you cook potatoes covered or uncovered? ›

Place the pot over medium-high heat and bring to a boil. Once boiling, reduce the heat to a bare simmer. Do not cover. (Covering changes the environment in the pot and can make the potatoes turn mushy.)
