For an easy way to cook bell peppers, try this simple sauté that takes just 15 minutes to make. All you need is a drizzle of olive oil, chopped red onion, and a couple of bell peppers. Use one red and one yellow pepper for a pop of color on your plate beside grilled or roasted meat, tacos, or a casserole.

Directions

  1. Remove seeds and ribs from peppers; cut lengthwise into strips and halve crosswise.

  2. Heat oil in a large nonstick skillet over medium heat. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until peppers are just tender, about 10 minutes.

Cook's Notes

If you like, you can toss in some fresh chopped herbs, such as basil, dill, or parsley, just before serving.
