Is there anything more festive and summery than a fresh fruit salsa? I could live off of a bowl of it any time, but especially when the warmer weather start sticking around AND Cinco de Mayo is just around the corner.

Now I know I've shared fruit salsas with you before (Strawberry, Peach, Mango,) but somehow I missed the classic pineapple one. There is something just so darn perfect about pairing the tropical fruit with cilantro and lime. It tastes like a tropical dream and instantly transports your tastebuds somewhere warm. My version is light, simple and comes together in ONLY five ingredients.

Here's how to make my Fresh Pineapple Salsa recipe...

The only challenging part about making this salsa is chopping up the pineapple. You could buy one with the spiny parts already off from the store, or invest in this easy to use $6 tool to help you get to the actual fruit. From there it takes a little time to cut the pineapple in tiny cubes, but is worth the effort.

I tried to make mine all puurrrr-ttyyyy for the pictures... but here's a secret... it tastes the same even if you can't get the pieces perfect. Don't let knife skills or lack of them keep you from trying this recipe.

Next you toss it with chopped red onion, cilantro and lime! I also added some jalapeno. If you don't like spicy food make sure to remove the seeds and white part because that's where the heat is. You can adjust the amount of jalapeno in the recipe to your own personal heat preferences.

I like heat and don't mind adding more to mine!

Dunk the Fresh Pineapple Salsa recipe in your favorite chips for a snack that just pops with flavor. The sweet and salty combination is foodie perfection.

Unlike guacamole this salsa stores well in the fridge for a few days, making it a great dish to make ahead of time for a party... maybe even a Cinco de Mayo party this weekend??? Just an idea. 🙂 It would also be great with fish tacos.
